Eduardo Dingler was born in Torreón, Mexico he moved to Napa, California in 1999 following his passion for wine where he has worked at some of Napa Valley’s most celebrated restaurants. In 2010 he joined the Morimoto Restaurant Group with the opening of Morimoto Napa. He eventually became the Corporate Beverage Director. During his tenure with Morimoto he built and developed the beverage programs for several Morimoto locations including Mexico City, Maui, Disney Springs, and Bangkok. It was then when his love for sake took off and led him on multiple trips to Japan where he became involved with the Japanese Government as Shochu, Sake, Whisky and Craft Beer ambassador.
After his time at Morimoto he started writing for several publications which include an ongoing weekly column at the Napa Valley Register, a stint at Decanter Magazine and others. He is currently VP of Wine at Wine Access, an online wine platform retailer as well as a continued supporter of Sake and Shochu.
