Cocijo Mezcal Añejo starts with agave grown for at least 7 years in Oaxaca, Mexico. After harvest, the juice is fermented and double distilled to create joven mezcal, which is then aged in oak barrels for 2 years. The resulting flavor is herbaceous and complex, with notes of leather and chocolate.
